Canning Peaches: A 10 Step How To

You’ve always wondered how to can peaches. Here’s a step-by-step How To for making delectable peachy goodness to be enjoyed for the rest of the year.

  1. Have a lot of peaches: Make sure they are ripe or over ripe for sweetness, the skin will also come off better. Ugly peaches make the best peaches
  2. Boil them: Boil water and drop the peaches in the water for about 30 sec to help remove the skin
  3. Take the out of the water: Be carful using tongs to take the peaches out of the water the skins should fall right off. If not remove the skin. You can use the skins for your compost.
  4. Cut them up: Cut the peaches into halves or quarters depending on the size of the jars you will be using.
  5. Syrup: Make the syrup to go over peaches at the same time as the other processes. The syrup recipe is 1 part honey 3 parts water, bring that to a boil then bring it down to a simmer and keep it on until you are ready to dip the peaches.
    • Why Syrup? The syrup keeps the sweetness of peaches contained within the peaches them selves. If you don’t want to use honey, sugar can also be used as a substitute. However water cannot!
  6. Grab your canning jars! The older the better. The jar not the lids, If you reuse the lids too many times they wont be able to seal. Lids costs about $0.20 apiece so just make the investment and buy some lids. Also make sure the jars you have can sustain high temperatures.
  7. Safety First: Boil the cans for safety. Make sure you don’t cool them too fast as this may cause the class jars to crack or shatter.
  8. Fill them up: Fill up with peaches until about ¾ of the way. Next fill the jar with the syrup until it reaches the bottom of the lip, to avoid any over flow in the next step. Make sure the syrup is still hot when your pouring it will also help with the next step.
  9. Vacuum seal the can: You can use a steam canner or you could place it in boiling water with a lid to start the vacuum sealing  process, this should take about 45 min.
  10. Check the Lid: Just like when your buying jelly form the store if the lid of the jar is flexible and pops, it’s not ready yet. The center of the lid should be firm, telling you that there is no air in the can. If it’s not ready, put it back in the water. If it is ready just wait. DO NOT TAKE THE JARS OUT OF THE WATER! You want to keep the jars in the water to allow them to cool at the same time the water cools. The last thing you want is glass and hot syrup every where, especially if children or pets are around.

  1. Give them as a gift: People love gifts and there is always some occasion where it’s customary to present a gift of some sort. You could either use a piece of colorful cloth and a rubber band to decorate the top of the jar, or you could get pretty tissue paper and a nice satin ribbon and wrap the whole jar. Canned fruit is the gift that just keeps on giving.
  2. Make a pie: Homemade marinated peaches taste so much better than any canned or fresh peach pie concoction.
  3. Ice Cream: Yes you can make peach ice cream! Follow the regular homemade ice cream recipe and just fold in your peaches.
  4. Peach Cobbler: Very much the same steps and reasons as the peach pie…only better. This author suggests adding your homemade peach ice cream a la mode.
  5. Warm Fruit Cocktail: Just as the name suggest, you pop open your canned peaches (and any other canned fruits you may have) add as many fresh fruits as you want, put wax paper on a cookie sheet and let it warm up in the oven. If you don’t like the mess,  you could always toss it all in a pot and heat it on the stove top. Or resort to simpler means and just toss it in the microwave on low for a few minutes. No Matter how you heat it up, warm fruit cocktail is perfect for cold winter nights.

Of course canning isn’t just for peaches. The recipe/process shared above is specific to peaches. However, it can be applied to many other ripe fruits. The best time for the peach canning process is in late summer and early early fall.
